Potato Curry Vegan Dinner Recipe

Potato curry is a comforting meal for Sunday dinner or a cold night. Remember to use brown rice for 60% more nutrients than white "enriched" rice.



Ingredients


1 can of coconut milk

½ cup vegetable broth

2 tbsp olive oil

1 onion

2 tbsp garlic

1 tbsp ginger

1 tbsp brown sugar

6 tbsp red thai curry paste

10-15 diced cherry tomatoes

½ small container of mushrooms

1 bag gold fingerling potatoes

1-2 cup green beans

3-4 small peppers

1-2 cup spinach

1 cup peas

½ lemon

1 cup cooked rice


Directions


Bring to boil rice and water, cover and reduce to simmer. Heat oil and add garlic, ginger, onion, peppers, curry paste, and mushrooms. Stir in coconut milk, vegetable stock, brown sugar, and potatoes. Simmer for 30 minutes or until potatoes soften. Add spinach and peas. Reduce to low and simmer for 5 more minutes. Serve over cooked rice.
