Savory Vegan Pad Thai

Pad Thai is great with any vegetables that are leftover in your refrigerator. A very quick meal because the noodles cook so fast! Make sure you buy brown rice noodles for 60% more nutrients than white "enriched" noodles.



Ingredients


1 pkg brown rice noodles

green onion

cilantro

lime

any vegetables - peas, carrots, broccoli, squash

peanuts


Sauce

¼ cup peanut butter

2 tbsp coconut amino

2 tbsp lime vinegar

1 tbsp sriracha

2 tbsp brown sugar


Directions


Mix sauce. Bring a pot of water to boil for noodles. When water boils, add noodles - brown rice noodles boil for 5 minutes. Drain. Rinse if sticking. Heat oil in a pan and add vegetables. Add sauce and noodles. Mix.
